Everybody loves cupcakes, but imagine the calories that comes along with it…
to overcome guilt of cupcakes here is my version of Salad cupcakes.
Ingredients
Big fat cucumber 2
Boneless chicken 1/2 cup
Spring onion. 1
Red bell pepper 1/4
Cabbage 1/4 cup
Garlic Mayo 2-3 tbsp
Avocado 1
Mustard. 1 tsp
Lemon juice 1 tsp
Pepper powder 1/4 tsp
Salt to taste
Method:
Wash n dry cucumber, peel the cucumber partially so that thin strips of skin is left.
With melon scooper, scoop out the centre if cucumber making it like a cup.
Season with cucumber cups with little salt n pepper.
In a bowl mix all the remaining ingredients n mix well. With a small spoon take the salad mix n place it in the cucumber cups.
Garnish with parsley, olives or anything of your choice
