Egg less Chocolate cupcakes 

 
Yield 24 cupcakes

Ingredients:

3 cups Maida
2 cups sugar

1 cup coco powder

1 tbsp coffee

2 tsp baking powder

1/2 tsp baking soda

1 tsp salt

2 cups milk

1 cup butter

1/2 cup curd

 

Method:

Preheat the oven to 180 deg C. Grease and line the muffin tray with cupcake liners.
In bowl sieve all the dry ingredients (maida, coco powder, coffee, baking powder, baking soda, salt)
In a separate bowl with the help of electric hand blender beat butter until pale in colour , then add sugar gradually and keep mixing till sugar is completely dissolved in it.
Add vanilla essence, milk and curd in the butter and sugar mix and beat well so that all are well incorporated
Now add the dry ingredients into wet ingredients and mix it well. DO NOT OVER MIX THE BATTER.
With help of ice cream scooper put equal quantity of batter in each cupcake liner. Bake for 17-20 minutes or until the toothpick comes out clean.
Leave the cupcakes to cool slightly in the muffin tray , remove and keep it on wire rack to cool completely.
