Paya ( Goat trotters)

 

Paya also known as trotters will be in the favorite list in any hardcore non vegetarian.

It is must have during festival of Eid ul Adha, It long long to cook, so use of pressure cooker is a must. Long before the pressure cooker becomes common this dish was cooked over the coal, which use to take almost 12 to 18 hours to cook.

It is tastiest and healthiest Shorba or curry.

Ingredients:

6 legs Paya / trotters
1 Onion

1 tsp Garlic paste

1 tsp Ginger paste

1 Black cardamom

1 Cinnamon stick

3 Cloves

Salt to taste

4 cups Water

For Gravy:

2 Onions sliced

2 tsp Ginger garlic paste

1 tsp Red chili powder

1/2 tsp Turmeric powder

1/2 tsp garam masala

1/2 cup curd

1 tsp Cumin powder

1 cup Oil

salt to taste

Fresh coriander

Lemon juice.

 

Method:

In a pressure cooker add all the ingredients for the paya. Add half amount of the salt.

Cook in pressure cook for an hour until they are tender and water reduced to 1 glass.

Separate paya pieces and strain broth.

Heat oil and fry onions until golden brown.

Take fried onions out and blend with curd to make smooth paste.

Add paya pieces to oil and fry on medium flame.

Add ginger garlic paste, cook for a minute.

Add yogurt and onion paste.

Now add all the spices, salt and one cup water and cook for 3-4 minutes, then add paya broth.Simmer for 7-8 minute add chopped coriander and lemon juice.

Serve hot with chapati or naan.
