Aloo puri and kesari halwa

Aloo Puri is one of the favorite breakfast of all Indians be Vegetarian  or non-vegetarian. It consists of spicy and tangy potatoes sabji and puffed up puris.

ALOO SABJI

Ingredients:

2 Potatoes ( boiled and cubed)

1 onion finely chopped

2 tomatoes finely chopped

1 tsp garlic paste

1 tsp ginger paste

1 tsp Jeera

1/4 tsp hing

2  green chilies

1 tsp coriander powder

1 tsp Kashmiri chili powder

1/2 tsp jeera powder

1/2 tsp Haldi

1/2 tsp crushed kasuri methi

Salt to taste

4 tbsp Oil

2 tbsp chopped green coriander

 

Method:

Boil ,  peel and cube the potatoes, keep aside.

Heat oil in a kadai and add Jeera, hing followed by ginger and garlic paste. For for 2 minutes then add chopped onion and fry till it turns pink.

Then add chopped tomatoes and cook till the tomatoes are soft.

Add all the dry spices , green chilies and cook for a minute. Then add 2 cups of water and let it boil for 5 minutes.

Add boiled potatoes, slighly mash them.

Let it cook for 8-10 minutes on medium heat. Check for seasoning if required add salt and crushed kasuri methi.

Before serving sprinkle chopped green coriander.

Serve with hot puris.

 

PURIS

Ingredients:

1 cup Wheat flour

1 tbsp fine rava

2 tbsp Oil

1/4 tsp salt.

Water.

Oil for frying.

Method:

In a big  bowl take the wheat flour , rava, salt n oil and with finger mix every thing well.

Gradually add water in the flour mix and start kneading. The dough of puri is hard. So very carefully add the water. Once the puri dough is ready put it in air tight container and let it rest for 20 minutes.

Heat oil in wok for deep frying puri.

Now we roll puris. Take small amount of  dough( size of small table tennis ball) with of rolling pin roll out the small chapati but don’t make it too thin.

Once hot is nicely heated , slowly and carefully slide the puri in oil , While the puri is slowly coming to the surface, make sure to keep pouring in the hot oil on the surface of puri with spoon this will make puris to puff up.

When one side is golden brown turn the puri n let it cook on the other side.

Remove the puri from oil and drain it on absorbent paper.

Serve hot with aloo sabji .
