2 cans of sweet corn
1/2 Mayonnaise( low fat)
1/2 cream cheese ( low fat)
1/2 sour cream ( low fat)
1/2 cup grated chedder cheese
1/4 cupgrated mozzarella cheese
2 cloves of crushed garlic
1 tbsp mix dry herbs
4-5 stalks of spring onion
Salt and pepper
2 tsp chopped parsley
Corn chips or tortilla chip
In a large bowl mix all the ingredients except mozzarella cheese and chopped parsley.
Preheat the oven at 170 degree C. Transfer the corn and cheese mix in oven proof dish and sprinkle on top the mozzarella cheese .
Bake it at 170 deg C for 25-30 minutes or till the cheese is all bubbly and the top is slightly brown.
Remove from the oven and let it cool for 10 minutes. Sprinkle chopped parsley.
