Navaratan Korma

 
Ingredients:

2 cups of mixed vegetables ( carrot, beans, peas, cauliflower, baby corn, bell pepper)

3 tsp pumpkin seeds (soaked and then made paste)
10 raisins soaked in water
1 large onion finely chopped
1 tomato, chopped
3 green chillies ( paste)
1/2 tsp cumin seeds
1/4 tsp Turmeric powder
1 tsp cumin powder
1/2 tsp red chili powder
1/4 tsp garam masala powder
1 tsp ginger garlic paste
1 cup coconut milk
1 tbsp olive oil
Salt to taste

Method:

Place a wok on a stove and pour oil, when hot add cumin seeds and let it crackle. Then add chopped onion and sauté till it turns translucent then add ginger garlic paste followed by green chilies paste. Cook until the rawness of ginger and garlic goes and onion also turns pink.
Then add all dry spices and roast them for 2-3 minutes then add chopped tomatoes and let them cook for 3-4 minutes the add all the veggies and cook for 5 minutes on low heat covered when veggies half done add coconut milk and bring it to boil then add pumpkin seed paste and soaked raisins.
Cover and let it simmer till the veggies are cooked.
Serve hot with Paratha or Rice.
