Ingredients:
250 gm medium sized prawns
1 1/2 tbsp rice flour
1 tsp cornflour
1 tsp ginger paste
1 tsp garlic paste
1 1/2 tbsp lemon juice
1 tbsp red chili powder
1 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp turmeric powder
Salt to taste
1 tsp oil for marination
Oil, for deep fry
1 tsp chat masala
Small bunch curry leaves
Peel and devein the prawns, wash thoroughly and pat dry.
In a bowl, marinade the prawns with ginger garlic paste, 1/2 tbsp red chili powder,cumin powder, turmeric powder, coriander powder, 1 tbsp lemon juice,curry leaves, salt, keep marinated for 15 to 20 minutes.
Once marinated, add rice flour, cornflour, another 1/2 tbsp chili powder, rest 1/2 of the lemon juice with 1 tsp of oil. Mix all the spices with the marinated prawns.
Heat oil for deep frying at medium heat.
Add marinated prawns along with curry leaves in the hot oil in batches, fry till they turn a rich golden brown color on both the sides. It take around 2-3 minutes each side.
Remove the prawns in absorbent kitchen towel and sprinkle the chaat masala.
Serve hot with lime wedges.
