Asian Cucumber and Carrot sesame Salad


2 cucumbers
1 carrot

1 tbsp balsamic vinegar

1 tbsp lemon juice 

2 tbsp honey, 

Salt to taste

1/2 tsp cracked black pepper

2 tbsp olive oil

1 tbsp dry roasted sesame seeds 

2 tbsp crushed roasted peanuts

6-7 fresh mint leaves

If you have a jullienne peeler use that to cut cucumber and carrots in thin juliennes or you can slice the carrots and cucumber thinly with a knife.
Discard seeds of the cucumber. Place sliced cucumber and carrots in the bowl.
 In a separate bowl mix together vinegar, lime juice, honey, olive oil, black pepper.

Place the cucumber and carrot noodles into a large bowl, and add 2-3 tbsp dressing so it coats all the noodles.
Put sesame seeds and peanuts and mix. Garnish with mint leaves. 
Serve immediately
