Watermelon and Lemon Granita


1/2 cup water
1/2 cup sugar

4 cups watermelon

1 tbsp lemon juice

Sprigs of mint leaves

Dehydrated Candied lemon rinds (optional) 


Over a medium heat mix water with sugar and stir until dissolved.
Make puree of watermelon with the sugar syrup and lemon juice until smooth. 
Pour the mixture into a baking pan and freeze for an hour. Using a fork, scrap the granita.
Do this after every hour for at least 5-6 times or until frozen and fluffy.

For serving fluff up the granita with a fork. Scoop into bowls, garnish it mint leaves and candied lemon rinds.
