If you ask me one thing that I would love to eat for rest of my life, my answer would be Sandwiches!! It is such versatile food.
Make it savoury or sweet, vegetarian or non vegetarian, with bread or without, it has endless possibilities.
Since beautiful, plump and juicy cherries has flooded in the market, i was keen to use them in my sandwich. I looked up in net to check which flavors I can pair with cherries and came across the beautiful recipe by blogger Closetcooking.
Amal school vacation are also going on, so I had to keep her entertained as well. So what better way then cooking together. It is such simple recipe that even your kids would enjoy making it.
I have incorporated the flavors of cherries, balsamic vinegar and cream cheese to make sweet and tangy sandwich, which was a prefect evening treat for Amal. Roasting cherries with balsamic vinegar, took flavor to next level.
Ingredients:
4 Bread slice
2 tsp butter
1 cup pitted cherries
1 tsp balsamic vinegar
2 tsp sugar
1/2 cup Cream Cheese
2 tsp confectioners sugar
Method:
Take the pitted cherries in a bowl and drizzle balsamic vinegar and sugar and toss them so that all the cherries are well coated.
Preheat the oven at 220 degrees C. Transfer the cherries on roasting tray and place them in the oven for 15-20 minutes.
When the cherries have cool down, with help of back of a spoon muddle it.
In a separate bowl take room temperature cream cheese add confectioners sugar and beat well until it mixed and smooth.
Take a teaspoon of cherry mix and add it to cream cheese and mix well.
Apply butter on side of the bread and toast them on the griddle till it gets marks.
Place the toasted breads on the work surface, first put a layer of roasted cherries, on top put a layer of cream cheese and again roasted cherries.
Finally cover it with another slice of toasted bread.
