Ingredients
Carrot 2
Cucumber 2
Radish 1
Spring onion. 1
Red bell pepper 1/4
Cabbage 1/4 cup
Garlic Mayo 2-3 tbsp
Cream cheese 2 tbsp
Avocado 1
Mustard. 1/2 tsp
Lemon juice 1/2 tsp
Pepper powder 1/4 tsp
Salt to taste
Method:
Wash n dry cucumber, Carrot and Radish. Peel the carrot and radish ( not the cucumber) with peeler and slice them into thin long strips.
Season with cucumber, carrot and radish strips with little salt n pepper and keep it aside.
In a bowl mix finely chopped carrot,cabbage, spring onion, red bell pepper and all remaining ingredients and mix well.
On the work surface lay down a strips of carrot radish and cucumber over lapping each other. With help of small spoon spread the salad mix on to these strip.
Carefully roll them, creaminess of salad mix will hold it together if not you can use toothpick to hold them together. Repeat this with all the remaining strips.
Garnish with dill leaves or parsley or anything of your choice.
Bite size Tricolor salad rollups are ready to serve.
