500 gms firm pears,
1 onions,
2 garlic cloves,
1 cup chopped dry apricot
3/4 cup brown sugar
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp red chili powder
1/2 tsp black pepper
1/2 tsp cinnamon
1 tsp fennel seed
salt to taste
1 1/2 cups cider vinegar
2 tbsp tomato paste
1 tbsp lemon juice
2 tbsp butter
Method:
Wash, peel, core and cut pears and keep it aside. Chop onion , crush garlic and also chop dry apricots.
Take heavy bottom saucepan and put chopped pears and onion in it and just it sweat over medium heat for 5-7 minutes.
Then add the rest of the ingredients except butter and increased the heat to high to bring the mixture to a boil.
Once it starts to boil reduce the heat and let it simmer, stirring occasionally. Don’t cover the pan with lid. Cook for around 25 minutes or until the chutney thickened.
Add butter and mix well, this gives nice shine to chutney. Let it cool completely. Store it in airtight sterile jar.
Serve with toast or paratha.
