Skinny Chicken Fajitas

Ingredients:

2 Chicken breast

2 cloves of garlic

1 tsp oregano

1 tsp cumin powder

1 tsp soya sauce

1 tsp chili flakes

Salt to taste

1 lemon

2 tbsp olive oil

1 sliced onions

1/2 avocado slices

1 red bell pepper cut into strips

1 green bell pepper,cut into strips

1/2 cup sour cream

1/2 bunch parsley

3 tbsp guacamole ( made with other half avocado)

Hot chili sauce

3 whole wheat thick rotis or tortillas.


Method
Cut chicken breast in strips. Marinate chicken strips with dry oregano, cumin powder, salt, chili flakes,1 tsp olive oil, soya sauce and the lime juice for around 20 minutes.
Cut bell peppers and onion in strips similar to size of chicken breast.
Heat a wok add 1 tbsp of olive oil when hot put chicken along with marinate and cook over high flame we want to dear the chicken strips and not braise. Cook for 5 minutes or until the chicken is cooked.. it won’t take long.
Remove the cooked chicken and keep it aside. In same wok add remaining 1/2 tbsp of oil add crushed garlic along with sliced onion, after a minute add sliced bell peppers and season with salt and pepper. Cook until slightly soft that is for 2-3 minutes.
Put the cooked chicken back in wok along with veggies and cook for another minute. Chicken fajita is ready.

Assemble chicken fajitas:

Take a roti/ tortilla spread little guacamole, top with chicken fajita, sour cream, chopped parsley and hot sauce. Serve with lemon wedges.
