Minty peas soup with spicy garlic prawns 


Minty peas soup:
2 cups frozen peas

2 cloves garlic

1 green chili

2 stalks of spring onion

1 cube seasoning

1/2 tsp white black pepper

1 cup mint leaves

1 tsp lemon juice

Salt to taste
Spicy prawns 
12-15 large prawns

1 tsp garlic powder

1/2 tsp red chili powder

1 tsp lemon juice

1/4 tsp black pepper powder

1 tbsp olive oil

Salt to taste

In a saucepan heat 3 cups of water, when water starts boiling add seasoning cube, chopped spring onion, green chili, chopped garlic, salt and peas.
Cook for 7-10 minutes over medium heat, don’t cover with lid.
After peas are nice and soft, switch off the flame. Add mint leaves and stir and let it cool a bit before transferring to blender jar to make purée.
Once slight cool in blender make the soup mix into smooth puree.
Transfer the soup back in saucepan, reheat it. Adjust the consistency of soup.
Add white pepper powder and lemon juice in the soup and mix well. Soup is read to to serve.

For spicy garlic prawns, marinate clean and devined prawns with all the ingredients for atleast 20 minutes.
Preheat air fryer at 160 degree for at least 10 minutes. Air fry prawns for 8 minutes or until its cooked.

For plating pour hot soup in the bowl drizzle 1/2 tsp olive oil and few mint leaves and on side serve spicy prawns on skewer.
