TAWA KHEEMA

Ingredients

1/2 kg mutton mince

4-6  green chilies

2 onions finely chopped

1 potato, cubed and deep fried

1 tbsp whole garam masala

2 bay leaves

1 tomato finely chopped

1 tbsp ginger and garlic paste

1  tsp red chili powder

1 tsp cumin powder

1 tsp coriander powder

1/4 cup oil

salt to taste

1/2 tsp garam masala powder

4-5 tbsp chopped coriander leaves

Method:

Wash mutton mince and place it in a colander for atleast an hour to remove all excess water.
Heat oil in a tawa and put whole garam masala and bay leave and let it fry for a minute, then add the onions and chopped green chilies, after 2 minutes put ginger and garlic paste and saute until the raw smell of ginger garlic evaporates.

Add the mutton mince and over high heat fry it till all the water of mince is completely dry and oil can be seen on the sides.

Add chopped tomato, fried potatoes, red chili powder, cumin powder, coriander powder and salt. Bhuno the masala and mutton mince, stiring occasionally taking care that it does not burn from bottom. If it gets too dry sprinkle little water in between.

Lower the heat and let it simmer until the kheema cooked. Sprnkle garam masala powder, chopped coriander leaves and squeeze lemon juice.

Serve with indian pav or paratha.
