I had already cooked meal for the day early today as it was cleaner day, so I prefer finishing off my cooking before he comes.
Lunch was nothing fancy, usual dal, sabji , roti and chawal. I knew Amal would make fuss at lunch time.. as there was no non veg. Normally during schooldays she would not a picky eater but since holidays are going on, she is troubling me a lot.. very difficult to keep kids happy.
As i had expected she started her whining, normally i don't give in to her demands easily but today i made exception and asked her what she would like to eat then..she thought for couple of minutes and said pancakes.. What?? Pancakes for lunch?? Was my reaction.
But then i agreed and i got certified by Amal that i am 'best mom' ever 😃
1 cup All purpose flour
2 tsp Baking Powder
2 tbsp Sugar
3/4 cup Milk
1 Egg, beaten
2 tbsp Melted Butter
1 tsp Vanilla essence
A pinch of salt
Slices of banana
2-3 tbsp honey
In a bowl put All purpose flour,
Baking powder, sugar and salt. With help of whisk mix well.
In separate bowl add all wet ingredients. Milk,egg, vanilla essence and melted butter mix well and pour it in dry ingredients bowl and gently stir just until it is all combined. If the batter is too thick add couple of tbsp of milk.
Let the batter rest at least for 20 minutes.
Heat a pan on medium heat and grease it with butter. Pour a ladle of batter on greased pan and flip when tiny bubbles appear. Cook on both sides until it turns golden and cooked.
Serve hot with fresh fruits and maple syrup or honey.
