Cherry banana ice cream

Yes i am back again with yet another cherry recipe…. but don't blame me for it. I just can't resist those rubies. And fortunately the market is flooded with these beauties. We barely get them for couple of months, so making most of it.

With the kind of heat wave in Gulf, it was apt to make something cold, what is better then ice cream ?

But I don't own ice cream machine and i have no patience to hand churn the ice cream. So I opted for easy way out. This three ingredients ice cream is so easy to make and you eat guilt free.

The frozen banana base ice cream, to which i added frozen cherries and also added few swirls of cherries coulis to give extra cherry flavor. But instead of adding heaving cream or whipping cream I added store brought Dream whip packet. You can substitute it with Cool whip as well. Below is picture of Dream whip for your reference.

But if you are unable to get the Dream whip or Cool whip in your town you can use heavy cream/ whipping cream please add couple of tbsp of sugar for sweetness.

Few hours in freezer and cream ice cream is ready to serve.

Ingredients:

2 sliced and frozen banana
3/4 cup frozen pitted cherries
1 sachet Dream whip

Method:

Place frozen banana and cherries in a food processor and blend until smooth. You will need to stop and scrape down the sides couple of times.

Then add a sachet of dream whip and blend again, this will thicken the ice cream.

If you want to have swirl of cherries coulis add few tsp of coulis and gently swirl in. Don't make it completely. ( Recipes of coulis is given below).

Transfer to a freezer-safe container, preferably metal container and freeze for at least 4-6 hours.
Scoop with an ice cream scoop and serve cold.

Recipe for Cherry coulis:

12-14 pitted cherries
2 tbsp sugar
1/2 tsp lemon juice

Method:

To make Cherry coulis, in a pan add pitted cherries, sugar and lemon juice and cook it for 5-6 minutes. Cool and transfer it in a bowl.

Serve this ice cream with chocolate syrup and fresh fruits.

  2. We make banana ice cream nearly every evening at our house lately. It’s easy, delicious, and an enless variety of things to mix in. Admittedly, I’ve never thought about cherries, although I should pick some and give this a try. They have some really beautiful ones at the Co-op. Yum! x

  3. I’m not a fan of bananas, but you have definitely given me ideas in the kitchen. Also, I’ve noticed that cherries in the store has been on sales a lot. That and raspberries and we’ve been buying a lot of them. Thanks for sharing.
