Many of my friends are trying keto diet. I saw they kept making cauliflower rice, cauliflower pizza base and many more ingredients are substituted with cauliflower.
But haven’t seen anyone making dessert out of it. So i was surfing and come across this fantastic blog call ‘Low carb yum’ and saw this fabulous recipe of chocolate mousse made out of cauliflower..
I was so not convinced that it would taste good. But this recipe was so good that I had to give it a shot. But of course I won’t spoil my whole head of cauliflower for this recipe, which I thought would be total failure. So I decided to make just two servings, incase no one eats then the loss won’t be much.
I gathered all the ingredients that was needed and quietly started prepping it, as I did not wanted my husband and daughter Amal to know that the base of this chocolate mousse is cauliflower, if they know it I was sure the would not even touch it forget tasting..
And my guinea pig was my daughter Amal post lunch I handed over the bowl of mousse to her and she wiped it clean. I asked her was it ok and she casually replied it was good😃
When I mentioned it to her that it had cauliflower she was so surprised.
I totally recommend this recipe.. I am sure it will satisfy your sweet cravings without much damage.
Ingredients
2 cup cauliflower florets
2 tbsp unsweetened cocoa powder
2 tbsp melted dark chocolate
1 tsp gelatin
1 1/2 tbsp sugar substitute
1/2 cup heavy cream
1/2 tsp vanilla essence
1/4 cup whipped cream for garnish
1 tbsp of chocolate for garnish.
Method:
Wash the cauliflower florets and place in the steamer. Cook cauliflower until soft, it will take not more the 4-5 minutes. Dry on kitchen towel as much as possible.
Immediately transfer the florets in food processor, puree cauliflower.
Put the gelatin in cream and let it bloom for 2-3 minutes. Then microwave the cream and gelatin for 30 seconds or until the gelatin is dissolved.
Add melted chocolate, cocoa and sugar substitute while cauliflower is still hot. Add vanilla essence.
Add in gealtin and cream in the cauliflower puree until it mixed well and is smooth.
Pour into serving bowls and refrigerate at least 3 hours.
Garnish it with whipped cream and shards of chocolate.
Enjoy it chilled and I am sure you would love it.
Best consumed within 24 hours.
