No Bake Blueberry Cheesecake

Summer vacation almost coming to end. Just couple of days then back to school. Wanted to treat Amal with something that is super fancy but was in no mood to spend hours in kitchen in this hot summer afternoon.

Last week I had a cheesecake order for one of my client, i had a leftover tub of Philadelphia cream cheese laying in the fridge. Obviously I would bake another cheesecake, so decided i would rather make no bake cheesecake that will be ready in jiffy 😀 and would be fancy to impress my daughter.

It is so simple to to make that within 20 minutes my No Bake cheesecake was ready, it just needed couple of hours in fridge to set. But then you don’t have to do anything, so i don’t mind that it takes that long to set.

For topping I used Blueberries. Just couple and ingredients and with 10 minutes awesome delicious Blueberry coulis is ready to serve. You can instead use any berries of your choice. I like to serve cheesecake with salted caramel sauce too.

So the choice is endless. Cheesecake base

up Golden Oreo crumbs

1/4 cup melted butter

Cheesecake filing

500 gms Philadelphia cream cheese

100 ml Heavy/ whipping Cream

3/4 can Condensed Milk

2 1/2 tsp Gelatin

1/4 cup milk

Topping : Blueberry coulis

2 cup Blueberries

1/2 cup water

1/4 cup sugar

1 tbsp lemon juice

1 tbsp butter

Method:

To make blueberry coulis, mix all ingredients in a small saucepan. Bring mixture to a boil. Reduce heat to medium-low; gently boil 10 minutes or until sauce thickens. Stir in butter.

Method for Cheesecake

To make crust, Put the oreo in food processor and pulse to make sand like crumbs. Add melted butter and combine until evenly blended and looks like coarse wet sand.

Press crumbs onto the bottoms of the springform pan. Keep it aside in refrigerator to set.

Sprinkle the gelatine over the milk in a bowl and let stand 5 to 10 minutes.

In a stand mixer put cream cheese, heavy cream condensed milk and vanilla essence and with help of paddle attachment beat well until all is combined and creamy.

Microwave gelatin and milk for 30 seconds and stir well until all the gelatin is dissolved. Let it cool for 2 minutes.

Add the dissolved gelatin in the cheesecake filing and mix well.

Divide the cheesecake cake filling in two bowls. In one part add 1/2 cup of Blueberry coulis and gently stir.

Remove the springform pan from the fridge and pour tge cheesecake filing with blueberry coulis in bottom. Then gently pour the second half of the cheesecake filling without mixing with the firat layer with help of back of spoon. Turn a spoon upside down. Place it inside the pan with the tip of the spoon against the side od pan, slowly pour the filing in the spoon. This way you will have clean layer of the colors.

Gently tap the pan on to the surface to release any bubbles. Place it in fridge to set at least for 8 – 10 hours.

When the cake is set pour the remaining coulis in top.

Serve chilled.
