Banana-Almond butter bread

Recently i had purchased homemade Almond butter from Affs healthy kitchen, I tell you, i have fallen in love with it.

I wanted to try and use it in something other than slathering on my toast for my breakfast. Wanted to cook or bake something using it.

Best i could think of substituting it with butter or oil in baking. Since almond butter is become so dear to me, i was not mentally prepared to waste it.. hahaha

I decided to bake a small batch of banana bread, but i was using almond butter, i wanted to enhance the almond flavor in the bread.

I had some leftover almond meal in the freezer which i had brought for macrons, which by the way were total disaster. So decided to use them along with the flour. And for more of almond flavor, i used almond essence.

I have baked it two mini loaf pans, but this quantity will yield 4 regular size muffins.

Now that i have made this moist and flavorful bread or muffins, I totally regret making a small batch..

Ingredients

1 over ripe banana

1 egg

1/4 cup sugar

2 1/2 tbsp almond butter

5 tbsp all purpose flour

3 tbsp Almond meal/ flour

1/2 tsp baking powder

1/4 baking soda

1/4 tsp cinnamon powder

Pinch of salt

1/4 tsp almond/ vanilla

essence

For topping:

2 tbsp almond flakes

2 tbsp melted chocolate

Method:

Preheat oven to 170 deg C.

In a bowl, mash ripe banana with a fork and keep it aside for later use.

Sieve together flour, almond flour, baking soda, baking powder, cinnamon powder and salt. Keep it aside.

In stand mixer add sugar and egg and beat in medium speed till the sugar is dissolved. Add almond butter and mashed banana and beat again, mixture will still be lumpy due to mashed banana.

Gradually add flour mixture in two batches and stir until just combined. Don’t over stir it.

Grease the loaf pan or muffin tray and divide the mixture in prepared muffin tray or loaf pan. Drizzle melted chocolate and give a swirl, and also sprinkle almond flakes on top.

Place the tray in preheated. oven. Bake for 17-18 minutes, until a toothpick inserted comes out clean and the tops turn golden.

Cool in the pan for 10 minutes then transfer it to a cooling rack to cool completely.

Moist and flavorful banana almond bread is ready to be sliced.

  1. The photos of it coming along I love, I always find it helpful when I’m cooking because then I feel at ease when I can see what I’m doing looks like the photos. ANd this looks like the perfect snack to take along to a nice family dinner.

  3. The first time I saw a banana combination for making bread. Looks delicious, I did not create as you and to waste bananas when not eating. I will try!
