Pav Bhaji

A true Mumbaikar can never say no to two things.. Vada pav and Pav bhaji. These two street food are core dishes of daily their lives.I am big fan of pav bhaji, the mashed up spicy tangy veggies and buttery soft pav ( buns). When i use to live in Mumbai i would hardly make this at home because i feel, I could never match with the taste and flavor that we get at roadsides eateries or restaurant. But since we relocated in middle east, I prefer making it at home.Normally this dish can be called up as a fridge clean up dish 😀😄 As its so forgiving recipe. Use whatever left veggies you have in your fridge and baam!!! You have pav bhaji as a meal.I don’t prefer using readymade pav bhaji masala due to allergy issues, but they are equally good.Ingredients:2 large boiled potatoes1 cup boiled mixed vegetables( cauliflower, carrot, peas, beans)1 capsicum chopped1/4 boiled beetroot4 green chilies1 inch ginger1 large onion chopped2 chopped tomatoes1 tbsp ginger and garlic paste1 tsp red chili powder1/2 tsp cumin powder1/2tsp Coriander powder1/8 tsp turmeric powderSalt to taste5 tbsp Butter / oilFor garnish:  Lemon wedges, finely chopped onion, 2 tbsp butter and chopped green coriander leaves.Method:In a wok heat butter and little oil. Saute chopped onion until it turns translucent and pink.Add ginger garlic paste and fry for a minute then add chopped tomatoes and green chilies. Cook over medium heat for 3-4 minutes. Until tomatoes get pulpy.Add all dry spices and roughly mashed vegetables including beetroot . Stir well and mash the veggies and boiled potatoes. Cook for 5 minutes over medium head stirring occasionally.Add salt and little water and cook. Cover with lid and reduce the flame to low. Cook for 2-3 minutes.Increase the heat and add little butter and stir well. Sprinkle lemon juice and chopped coriander leaves.Bhaji is done.Spread butter on the insiade and out of the pav(bun) and toast it in preheat oven or frying pan until it becomes golden from bith the sides.Serve hot Pav Bhaji with chopped onion, lemon wedges and chopped coriander leaves.
