Cold Sweet Potatoes Salad

I love Doha this time of year. Everything looks beautiful.. clear blue sky.. crystal clear water….wind blowing.. trees swaying… kids playing in park.. the smell barbecuing at beach side.. If the weather of Doha would be same throughout the year then no one would go to Europe for holidays 😆😆

The weather turning pleasant, its a prefect time for bbq and the prefect accompaniment for all chicken and meat bbq is this delicious potato salad. I have used sweet potato instead of regular one. It makes this salad delicious as well as high in fibre.

To make it more nutritious you can completely skip the cream and increase the quantity of greek yogurt but i love my cream so I would never skip it.

Ingredients:

2 sweet potatoes

1/4 cup cooking cream

1/4 mayonnaise

1/4 greek yogurt/ hung curd

1 stalk spring onion chopped

1/4 red bell pepper chopped

2 tbsp chopped coriander leaves

1 tsp American mustard

1 tbsp chili sauce

1 tablespoon sugar

salt

Method:

Wash and scrub the sweet potatoes under running water.

Boil potatoes in pressure cooker for 2 whistles or until just tender.

Let the pressure cooker cool completely before opening. Peel the sweet potatoes. Let the sweet potatoes cool completely before cut it into bite size cubes. Add chopped spring onion, red bell pepper and coriander leaves.

In a separate bowl mix all the ingredients of dressing and whisk well. Check for seasoning.

Pour the dressing on sweet potatoes, Garnish with coriander leaves or spring onion greens.

Store the salad in the fridge. It taste good when cold. It is prefect side dish for any picnics, potlucks or barbecue. And is loved by all young or old. Do give it a try I am sure even you would love it.
