Spicy Mexican Rice

If you are tired of eating Chinese fried rice ( like you can ever be😆😆) this Mexican style rice is equally good.. no preservatives from soya sauce or any store brought sauce. And all ingredients are easily available in your kitchen.

The recipe is super simple and very forgiving, so you add or substitute any ingredient. I occasionally use leftover rice and give it a whole new avatar to it.

It is very good lunchbox recipe for school going kids.

Ingredients:

2 cup cooked rice

1/2 red bell pepper

1/2 yellow bell pepper

1/2 green bell pepper

1/4 cup boiled corn

2 cloves garlic

1 small onion

2 fresh red chilies

1/2 tsp tomato paste

1/2 tsp mix herb

1/4 tsp chili powder

Salt to taste

2 tsp oil

Chopped parsley

Method:

Heat oil in the wok add chopped onion and crushed garlic sauté for 3-4 minutes add tomato paste, chopped fresh red chilies and chili powder, cook for another 2 minutes then add chopped bell peppers and boiled corns ( you can add beans too)

Cook till the bell pepper are soft, then add cooked rice and salt to taste and stir well.

Reduce the heat and cover the wok and cook for 5 minutes. Sprinkle some chopped parsley and serve hot.

This is Mexican rice is an excellent accompaniment with some grilled chicken or lamb chops or just use it in your burritos.
