Today Amal had stay back in school and I had so much time in hand just did not know what to do, so what better way to spend some me time by baking a chocolate cake. Here is small serve Chocolate cake with simple filling of whipped chocolate ganache and topped it with beautiful strawberries.
1 cup all purpose flour
1 cups sugar
6 tbsp Dark Cocoa powder
1 tsp baking soda
1/2 tsp salt
1 large egg
1/2 cup buttermilk
1/2 cup vegetable oil
3/4 tsp vanilla
1/2 cup hot water
Preheat oven to 170 C and grease a cake tin.
Add the dry ingredients to a large bowl and whisk together. Set aside.Combine the egg, buttermilk, vegetable oil and vanilla in another medium sized bowl.
Add the wet ingredients to the dry ingredients and mix until well combined. Add the water to the batter and mix until well combined. Batter will be thin.
Pour the batter in cake tin and bake for 25 to 30 minutes, or until a toothpick comes out with a few moist crumbs.
Frosting it with whipped chocolate ganache by using the ratio of 2:1 for chocolate and whipped cream.
1 cup whipping cream
2 cup semisweet chocolate
Warm the cream in microwave and pour over the chocolate and let it stand for couple of minutes. Mix well and let it cool.
Once cooled put the ganache in a bowl of stand mixer and whip it until light and fluffy.
