Carrot Salad with Honey Mustard Dressing

Summer is here and with summer there also comes BBQ season, and I love summer just because for BBQ.

The easiest part of BBQ is marinating meat and chicken. But then there is salad usually it’s same boring ones… not anymore.
I got the simple, easy to make carrot salad. It is nutritious, tasty and quick to make.
You would be surprised what a humble carrot can turn into.

The natural sweetness of carrot along with the burst of juice from pomegranate pearl every time you bite into and Honey mustard dressing takes it to the next level, It adds so much flavour.

𝘾𝙖𝙧𝙧𝙤𝙩 𝙎𝙖𝙡𝙖𝙙 𝙬𝙞𝙩𝙝 𝙃𝙤𝙣𝙚𝙮 𝙈𝙪𝙨𝙩𝙖𝙧𝙙 𝘿𝙧𝙚𝙨𝙨𝙞𝙣𝙜

Ingredients:

3 carrots, medium, stripped

1/2 cup pomegranate pearls

1/4 cup finely chopped parsley

Honey mustard dressing

1/2 tsp dijon mustard

1 tbsp honey

1 clove garlic

2 tbsp lemon juice, new

4 tbsp extra virgin olive oil

1/2 tsp salt

1/4 tsp black pepper

Method:

Wash and peel carrots. With help of julienne peeler or knife if you are good with your knife skills. Dip the julienne carrots in cold water for 10 minutes. It will crisp up the carrots.

After 10 minutes drain and pat dry carrot strips.

In salad bowl add carrots, pomegranate pearls.

In a small jar, combine the olive oil, lemon juice, Dijon, honey, salt, and pepper.

Shake well to mix. Pour the dressing over the carrots and pomegranate and toss well to blend. Sprinkle chopped parsley.

Taste and adjust seasoning if necessary. Cover and chill in refrigerate until ready to serve.

It’s a prefect side for your BBQ or picnic.
