There are three elements in this dish.
1. Chicken Roulade
2. Grilled Asparagus
3. Spaghetti
Lets start with Chicken Roulade
Ingredients :
4 slices Cheese
2 tbsp Feta Cheese
8 pieces of baby Asparagus
4 pieces Chicken Breasts
½ cups APF
1/2 tsp black pepper
Salt to taste
1 whole Egg
1 Tablespoon Water
½ cups seasoned Breadcrumbs
Method:
Preheat oven to 180 deg C.
First butterfly the chicken pieces by Placing the chicken breast on a chopping board . Hold knife along the long side of the chicken, slice through the breast almost to the end, being careful not to cut all the way through. Open the chicken and gently flatten the chicken with back of the knife.
Now sprinkle salt and pepper on both side of chicken then apply thin layer if Feta cheese on one side of chicken piece and on top of it keep a slice of cheese. Place 2 Aparagus on cheese and wrap the chicken around it, securing the edges of the chicken together with toothpicks. Repeat for the remaining chicken breasts.
Take 3 bowls and put flour in one, egg in the second and the breadcrumbs in the third. Dip the chicken roll in flour, egg wash, and then breadcrumbs and the gently place it on baking pan.
Bake in the oven for about 25-30 minutes, or untill chicken is cooked and cheese is melted. Don’t forget to remove the toothpicks before serving.
Now the second element is Spaghetti Carbonara
Ingredients
1 large egg
3 tbsp grated Parmesan cheese
salt to taste
1/2 tsp black pepper powder
1 tbsp minced garlic
200 g spaghetti
2 tbsp chopped paraley
2 tbsp extra virgin olive oil
Method:
Put the egg into a bowl add grated Parmesan, salt and pepper mix well and keep it aside.
Boil spaghetti according to the instruction in the packet. Drain spaghetti and keep it aside, reserve a cup of biling water.
In pan heat oil add minced garlic and add the drained spaghetti and let it heat up nicely if the spaghetti is looking very dry add little of reserved water.
When Spaghetti nice and hot quickly, egg mixture and toss all well (heat from pasta will cook eggs), sprinkled with more Parmesan cheese.
Thrid and final element of the dish is Grilled Asparagus
Ingredients:
1 bunch baby asparagus
3 tbsp butter
1 tbsp grated parmesan cheese
1/2 cup shredded mozzarella cheese
1 tbsp mix dry herbs
1/2 tsp minced garlic
Salt and pepper to taste
Method:
Place the asparagus on the baking tray and drizzle with the melted butter. Sprinkle the minced garlic, salt ,pepper and parmesan cheese over the top. Place in a 200 degree C oven for 15 minutes.
Remove and sprinkle with the mozzarella cheese and a little mix herbs over the top. Put it in oven for an anither 5-7 minutes to melt the cheese and let it begin to brown.
Plating :
Take plate place the grilled Asparagus and top it the Spaghetti and cut the chicken roulade in slices and serve it on side. You sprinkle additional Parmesan cheese on top.
