1 cup besan
1 cup Dahi
3 tbsp oil
1/4 tsp turmeric powder
Salt to taste
3 green chilies
3 tbsp chopped green coriander leaves
1 tsp Mustard seed
1/4 tsp hing
7-8 Curry leaves
1/2 tsp sesame seeds
In a big bowl take curd ,besan and 2 cups of water and whisk well so that no lumps are there.Then add salt, hing and turmeric powder and mix nicely.
Pour besan and curd mixture in microwave safe bowl.Place the bowl in microwave for 2 minutes at 100% power, take out the bowl after two minutes and stir well, it should be a smooth mix.
Again place the bowl in microwave for 2 minute and cook at 100% , again remove from microwave and stir well scrapping from side. The mixture will start getting thicker as it cooks.
After mixing the batter well again place back in microwave for 2 minutes to cook.We again repeat the process of stirring g the batter until it turn smooth.
Khandvi mixture must be almost ready now we put the bowl again in the microwave for last one minute,in total we have microwaved the khandvi mixture for 7 minutes.
After removing the bowl from microwave stir well the mix should be smoth and should not have any lumps in it.
Take a steel tray or a plate, invert it and grease the bottom with little oil so it will be easy for us to roll the khandvi when it dries.
With help of spatula spread the khandvi batter thinly on the gread plate and let it dry for 7-10 minutes.
Once the batter dries and sets, with help of knife cut it in strips of 3 -4 cm.
Now gently start rolling it to make khandvi, similarly roll all the remaining strips, and place the on the serving plate.
In a small pan make tadka for the khandvi. Heat oil add mustard seed, let it crackle then add chopped green chilies, curry leaves and hing. Drizzle this tadka on top of khandvi rolls and garnish with chopped coriander leaves.
Quick microwave khandvi is ready to be served.
