Cucumber Dill salad

Cucumber and dill salad is quick, refreshingly tasty and low carb salad.


A perfect side for your picnic or BBQ. This recipe is a nice change from the creamy style recipes as instead of cream or mayonnaise, I have used sour cream.


It is a super simple salad made with few ingredients like cucumbers, onions, fresh dill, Sour cream, fresh crushed garlic, salt, pepper, lemon juice, olive oil.

I love it because it’s such a simple salad, yet it’s packed with so much flavour that definitely everyone will love😋😋

Ingredients

100 gms Sour cream,

2 cloves crushed garlic,

Cracked pepper to taste

salt to taste ,

3 tbsp chopped dill leaves,

1 tbsp lemon juice

2 tbsp olive oil ,

pickled onion

2 thinly sliced pickled cucumber*

Method:

Wash and thinly slice cucumber.

Wash and chop fresh dill leaves.

In a bowl mix all the ingredients besides cucumber, pickled onion and dill leaves. Check for seasoning, adjust if required.

Add sliced cucumber and chopped dill leaves and mix. Keep some dill leaves aside for garnish.

Sprinkle pickled onion on top. Serve it immediately or you can chill it in the refrigerator for 2 hours, it will definitely taste much better.

* To make pickled onion

In a pan mix together the vinegar, salt and sugar. Cook over medium-high heat until the mixture reaches a simmer.
Place the thinly-sliced onions in a small bowl and pour the hot vinegar mixture over the onions. Stir well and let it marinate for 20 minutes. After 20 minutes it is ready to use.
