Ask any Punekar or Mumbaikar their favourite breakfast…And you would hear omelette pav or Bun Maska and best place to have is at Irani cafes.
For me greatest breakfast companion – fluffy omelette and buttery pav.
And if you are a fan of this combo then you must definitely eat at Irani cafe in Mumbai or Pune.
When I visit India I make sure I visit these cafes.
Here is how I whip up my Masala omelette and serve it with ladi pav.
1/4 tsp chili flakes
A pinch of haldi
2 green Chillies
1/2 small Onion sliced
2 tbsp chopped Coriander leaves
1 tbsp Ghee
Salt to taste
In a bowl with help of whisk mix eggs with salt, chilli flakes, turmeric, coriander leaves, onion and green chillies.
Heat heavy bottom frying pan add ghee when hot pour the egg mixture and let it cook over medium heat until done from one side.
Carefully flip and let cook on other side as well.
You place some cheese slices on the omelet and fold, this is optional.
Serve hot with lightly buttered and toasted pav
