Homemade Blueberry Pie

Have you ever bake a pie, well this is my first one but I am sure won’t be last, I have so much fun baking it.

I am super excited to share with you. It has simple ingredients and easy to make as well.

The pie filling is very easy to throw in a couple of ingredients with berries, stir and that’s it!

All it needs is a little bit of sugar, cornstarch, lemon and butter and your pie filling is ready!

As for the crust, it couldn’t get any easier, add cold cubed butter to the flour mix and rub the butter with your fingers until it resembles bread crumbs, with pea-size butter here and there.
Add ice water and get the dough together, wrap it in a cling film and place it in the fridge to firm up.

Roll the pie crust and press it in your pie dish, tip in the pie filling.

Since I was feeling fancy tried making lattice but you can always cover with the roll out the dough, just make sure you cut slash so steam can escape.

Bake it until the top is golden and the pie is bubbling away inside.

Ingredients for Pie crust

160 gms All purpose flour

115 gms unsalted cold butter

2 tbsp sugar

1/2 tsp salt

1/4 cup chilled water

1 egg (for eggwash)

Ingredients for Pie filing

350 gms fresh Blueberry

1/2 cup sugar

3 tbsp lemon juice

2 tbsp butter

3 tbsp cornflour

Method

In a bowl mix flour, sugar and salt. Add cubed cold butter and rub into the flour mix with tips of your finger until it resembles bread crumbs. It ok if small pieces of butter is still there.

Slowly add chilled water, a tbsp at the water, try to get together the dough, don’t knead the dough just bring it together into a ball.

Divide the dough into two disc and wrap it in a cling form and place in the fridge for for couple of hours.

For pie filing; in a bowl all the ingredients of the filing andmix well. You use even frozen berries just keep in mind to increase the baking time by 7-10 minutes

When the dough is cold and firm to handle with rolling and dusting of flour, roll out one disc and press it on to 7 inch pie dish. Place the pie dish in the fridge to chill.

Press pie dough on to the pie dish.

When the dough in the pie dish is firm and cold, tip in the berry filing.

On a lightly floured surface roll out the second disc and cut it into uniform strips. And make a lattice in the top of pue filing. If not confident you just cover the pie filing with rolled out dough and make neat cuts on top so steam can escape from ut while baking.

Beat a egg and gentle eggwash the lattice. Place the pie in the fridge until the oven is preheating.

Preheat the oven at 220 deg C for 10 minutes at least. Place the pie dish in the oven and baking at 220 deg C for 18 minutes, then reduce the temperature to 180 deg C and bake for another 40 minutes or until the top is golden and the pie filing is bubbling. If you feel the top crust is getting to dark the loosel cover it with the aluminium foil.

Blueberry pie

Remove from the oven and place it on the cooling rack.

When cool cut a slice and serve it with a scoop of Vanilla Ice Cream and few fresh blueberries.
