Badami Malai paneer ( Indian Cottage Cheese in a creamy almond base gravy)

This simple paneer recipe is my recent favourite vegetarian dish 😄
.
If you had enough of onion tomato based gravy or palak based Paneer dish then you should definitely try this one.
It is Almond and cream base dish, you can make it semi-dry like I did or leave it with thick creamy rich gravy.
It has subtle flavours nothing is overpowering.
The nutty and creamy gravy taste heavenly. You should definitely try the recipe once and sure you and you kids will love it.
I kept the gravy sem-dry as I wanted to serve it with paratha but you always add water to make the consistency of gravy asyou like.

Ingredients:
250 gms cubed Paneer
1 finely chopped onion
1 finely chopped tomato
1 tsp cumin seeds
2 tbsp crushed ginger and garlic
4-5 crushed green chillies
1 tsp cumin powder
A paste of 12-14 soaked peeled Amond
2 tbsp fresh cream
1 capsicum cubed
1 onion cubed
1/2 tsp kasuri methi
Salt to taste
2 tbsp oil
1 tbsp butter
2 tbsp chopped green coriander

Method:
Add oil in a hot pan, add cubed onion and capsicum and saute for a minute. Once done remove in a plte and keep it asidefor later.

In the same pan add cumin seed and let it sputter. Then add chopped onion and saute until light pink.
Add crushed ginger, garlic and green chillies and cook until raw smell goes off.

Add finely chopped tomato and cook until its soft.

Add cubed paneer and saute it for a couple of minutes. Sprinkle white pepper powder, cumin powder and salt to taste. Saute for 2-3 minutes. Add the sauteed veggies that we had kept aside.
Add the paste of almond. ( please soak and peel before grinding almond with of little water). Stir occasionally so that almond paste doesn’t burn. You can add a couple of tbsp of water if almond paste is sticking at the bottom of the pan.

When Almond paste is well roasted add fresh cream and mix well. Let it cook for 2-3 minutes on medium heat. Add crushed kasuri methi and mix well.

If you want the paneer with some gravy then add a half cup or more of water and bring it to boil. Let it simmer for some time.

When done sprinkle some chopped green coriander and drizzle some fresh cream.
Serve hot with Roti, paratha or chapati.

You always substitute with firm tofu instead of Cottage cheese and coconut cream instead of fresh cream to make a vegan dish

Hey Colette I am glad you liked it, instead of cottage cheese you can use halloumi cheese ( take care it is very salty so you need to soak tge cheese in water to remove excess salt. You can use extra firm tofu.

Lidl sells paneer sometimes. I always wondered what I could do with it. Now that I finally know, I’ll make sure to buy it. This sounds very much like my type of food!
