Salted Caramel Sago Pudding

Sago kheer or sabudana kheer is one of the most common kheer in any Indian household, and I would say its one of the easiest as well.

Sago pearls are also known as Tapioca pearls is used in savoury dishes also like Sabudana Vada and Sabudana khichdi.

Those tiny translucent white pearls look so pretty in sweet thicken creamy milk.

It is a gluten-free dessert and can easily made vegan by substituting milk with almond milk or coconut milk.

In this recipe I have tried to give a new flavour by adding caramel sauce instead of using cardamom or saffron wbich typical used in kheer.

Ingredients:

Sago – 3/4 cup
Full Fat Milk – 1 litre
Evaporated milk- 1 tin
Salted caramel – 1/2 cup
Sugar – 1/4 cup (optional)
Pistchio, Almond sliced -2 tbsp

Method:

Wash and soak sago for 2 hours. The water level must be up to the level of sago don’t put extra water.
Sago will become soft and double in size.

Add milk in the heavy bottom pan and bring it to boil, once it starts to boil simmer for 5-7 minutes.
Keep stirring to prevent burning at the bottom.

Add soaked sago pearls in the milk and let it cook over medium heat stirring occasionally.

After 15-20 minutes sago pearls will turn translucent when it’s cooked.
Add sugar and let it cook for another 5-6 minutes.
Add chopped nuts, keep some aside for garnish.

When the kheer thickens turn off the stove.
Stir in the caramel sauce, while the kheer is hot.

To garnish drizzle little caramel sauce and sprinkle chopped nuts, if feeling fancy add few dry roses 😊

Serve in individual portion and keep it aside to cool in the refrigerator.

The Caramel sago kheer will thicken as it cools down.

Caramel sauce

Salted Caramel Sauce

1/4 cup water
3/4 cup heavy cream
3 1/2 tbsp unsalted butter
1 cup sugar
1 teaspoon salt

In a pan over low heat, combine the sugar and water and heat just until the sugar is dissolved. Add the butter. Let it come to a boil and cook until it reaches a golden caramel color.
Remove from the heat and add the cream keep stirring.
Let tge sauce simmer over low heat and cook 10 minutes.
